GENERAL MANAGER (MARSTON MORETAINE & KING'S CROSS)

At Ruby Violet, we create bespoke ice creams, vegan sorbets, and frozen delights using only organic milk and the most simple or unusual fresh ingredients. All our ice cream is made from scratch including inclusions from jams to brownies and brittles. We are looking for an enthusiastic, passionate, and experienced Manager to join our team on a full-time basis and assist with our national growth. We are interested in people of all ages. 

We have recently moved our production from North London to Marston Moretaine, Bedfordshire! 

We currently have 1 parlour in London as well as a seasonal ice cream van, we work with restaurants and delis in London & Bedford and send our cakes, sundaes, and tubs to customers across the UK via our online store. We work closely with corporate clients and event companies to create bespoke products, some clients we have recently worked with are Gordon Ramsay, Ardbeg Whisky, Coco & Eve, and Eurostar. 

To sustain our efficient growth we are currently looking for a proactive, results driven professional multi site General Manager who can lead by example and drive collaboration and engagement to our Management Team. 

As General Manager, you will be fully responsible for overseeing the management of our retail and production sites. You will oversee company procedures including employee management, H&S and food hygiene, inventories and targets whilst maintaining a friendly and professional atmosphere. We are looking for an experienced and hardworking individual who is a natural leader and works well under pressure. You will be organised, efficient and detail oriented, whilst embodying our values. You will be passionate about providing excellent customer service and hold extensive experience managing a high quality and fast paced environment. 

Based in London and Bedford you will be managing our head chef, store manager, warehouse manager and office manager.

ROLES & RESPONSIBILITIES:

Ensuring that all Department Managers are proactively dealing with Sales, Stock,Labour Management and Wastage, with you monitoring these results daily and holding site meetings. 

Ensuring that all Managers are consistently well trained in their roles, so that they can fully provide ongoing training to their teams. 

Ensuring that all general HR is taken care of in a timely manner including holiday requests and return to work procedures. 

Quality control, performing quality checks on products leaving the kitchen and being served in the parlour. 

Team recruitment, performance management and development. Writing job descriptions, posting them on recruitment sites and interviewing potential candidates for Bedford and the management team. 

Monitoring communication standards. 

Training and coaching on all areas of Operational Brand Standards. 

Communicating and working towards annual and monthly targets with the rest of the team. 

Financial and operational administration. 

Key performance indicators. 

Monitoring and updating the company website. 

Statutory compliance of all retail and production sites. 

Running management meetings

SKILLS & EXPERIENCE:

Managerial experience ideally across multiple locations Experience in a F&B role 

Decision making Ability to delegate responsibilities 

Ability to think outside the box 

Ability to work well under pressure 

A great communicator, an ambitious leader who is able to engage, inspire and train a team in delivering exceptional work standards. 

Organised and able to multi-task to full capacity and perform effectively within a highly pressurised multi-site working environment. 

Able to ensure that the shops operate to their full potential in terms of sales, margins and H&S and hygiene standards.  

BENEFITS: 

37.5 hour contract (Additional hours may be required during busy periods but TOIL will be provided) 

2 days off per week

EXPERIENCED ICE CREAM/PASTRY CHEF & INNOVATOR (MARSTON MORETAINE)

We are interested in people of all ages with ice cream or pastry experience.

ROLES & RESPONSIBILITIES:

Ensure all cakes, delights, and ice creams are prepared according to Ruby Violet's spec.

Assist in developing new innovative recipes for cakes, ice creams, and other delights to sell in our parlour, to wholesale customers and nationwide. 

Assist in training new team members to make and prepare recipes. 

General kitchen organisation and maintenance incl. stock control and waste management. 

Assisting our head chef in creating and following structured production schedules.  

Assist in evaluating kitchen practices and improving productivity.   

OUR IDEAL CANDIDATE:

Organisation and excellent interpersonal skills are essential. 

Ability to thrive in a fast-paced environment. 

Excellent communication skills are essential as you may be required to work with other departments (packaging, office etc.). 

Creativity and the ability to innovate are essential. 

Ability to think outside the box. 

High attention to detail especially in terms of cleanliness is absolutely essential. 

High knowledge of allergens, ingredients, and food hygiene practices is essential. 

Being able to work well in a team as well as independently. 

Self-motivated and enthusiastic about doing the best job possible. 

Flexible in terms of working hours, you may be required to work evenings and weekends during busy periods of the year. 

2-3 years experience in making small-batch ice cream or working in a bakery as a pastry chef is preferred but we may consider candidates who have 1-2 years of experience or less if you have professional training. 

As we work with heavy ingredients some heavy lifting may be required. 

Level 2 Food & hygiene certificate is required.
